Safflower Varietal Honey

Our raw safflower varietal honey is produced near Ogden, UT and is dark with a greenish cast.  Safflower has a stronger taste than the clover with sweet spike followed by an ever so slight bitter note.  There is a subtle warmth to the honey that I'm not sure how to describe.  It's smooth texture is pleasing by the spoonful straight from the jar or drisled over a bowl of fresh fruit.
